This is a fundamental nutrition course for those who want a solid foundation to make informed dietary decisions or who want to continue their studies. This course consists of 5 narrated lectures with accompanying text printouts. Lecture One includes the three basic rules of nutrition, the food groups, shortcuts for balancing the diet, and specific topics such as why vitamins are taken out of our breads. Lecture Two shows how small changes can make big changes to your health. Other topics covered include different types of fiber, how to prevent food enzymes from being destroyed, detoxifying our bodies, juicing, raw foods vs cooked. Lecture Three explains in easy-to-understand language how to read a label, the surprising (and gross) ingredients added to our foods, how manufacturers hide sugar, and make one food appear lower in calories than another even when it's not. It also explains terms (often misleading) used on our food labels. Lecture Four I talk about nutrient rich foods, herbs and supplements. Phytonutrients are covered in this section including which plant colors mean which health benefits.
